Jackfruit Meat Coconut Curry

INGREDIENTS :
- 1 tsp cumin seeds
- 1 tsp mustard seeds
- 3 cloves garlic, minced
- 1-inch cinnamon bark
- 1 onion, diced
- 1 tsp grated ginger
- 2 green chilli powder (or to taste)
- 1 tsp turmeric powder
- 1 tsp garam masala
- 1 tsp coriander powder
- 1 tsp chilli powder
- Salt to taste
- 1 pinch sugar
- 1 tbsp lime juice
- 5-6 curry leaves
- 1 cup coconut milk
- 1 cup jackfruit meat
- ½ cup coriander leaves, finely chopped
INSTRUCTIONS :
- Heat a tablespoon of coconut oil in a saucepan and add cumin seeds and mustard seeds. Fry until it starts to brown, toast and pop.
- Add the garlic, ginger and onion. Sauté for about 5 minutes.
- Add the turmeric powder, garam masala, chilli powder, coriander powder, cinnamon, sugar and salt. Stir in ½ cup of water to deglaze.
- Add the pieces of jackfruit meat and cook until it turns soft and tender.
- Set to high heat and pour in the coconut milk. Bring the curry to boil and add in the curry leaves and coriander leaves.
- Turn the heat to low and let the curry gently simmer for 2-3 minutes.
- Turn off the heat, close a lid on the pan and let it sit for 10 minutes.
- Once ready, add the lime juice and stir well.
- Serve with rice.
